How to store snails safely

Live snails cannot be handled like already cooked food. You must respect the packaging, temperature and instructions received, then change the method after cooking.

Before cooking

Keep snails in their intended packaging, without transferring them to improvised airtight containers. Follow the temperature and time indicated by the manufacturer or communicated at the time of purchase.

Do not wash them well in advance and do not leave them near heat sources. Open and check the product when you are ready to cook.

After cooking

Raw and cooked must remain separate. Use clean utensils, let cool at room temperature without long pauses and store in a closed container in the refrigerator.

If you add a sauce, also consider the most perishable ingredients in the recipe. The specific indications of the preparation take precedence over the general rules.

Freeze: only with a defined method

Do not improvise the freezing of the live product. For already cooked or prepared snails, check that the recipe and packaging are suitable and use suitable containers, labeling the date and contents.

Thaw in the refrigerator and reheat completely before consumption, following the instructions applicable to the product.

When to stop

Anomalous odor, compromised packaging, temperature not respected or doubts about viability require caution. Do not try to "recover" a poorly preserved food with longer cooking.

Contacting the manufacturer with the batch and date is more useful than a rule found online, because it allows you to evaluate the real product.
