The starting table
As a domestic reference, a 1 kg pack of live snails with shell can be organized into approximately 6–8 small tastings, 4 second portions or in several portions if the meat goes into a first course with other ingredients.
These are service estimates, not universal net weights: size of the specimens, recipe, side dishes and appetite change the result.

The role in the menu counts
In an appetizer, curiosity and seasoning count more than volume. In a first course, such as risotto or pasta, cereals, vegetables and stock complete the portion. In the second course, snails are the protagonists and a larger quantity is needed.
If you are cooking for guests who have never tasted them, prepare a small initial portion and leave a small reserve already cooked for those who wish to continue.
Shell, meat and yield
The sales weight of live snails includes the shell, so it does not coincide with the meat available after cooking and cleaning. Avoid comparing it directly with the weight of already peeled meat in a recipe.
To repeat the same menu, write down how many portions you got from the package and how the dishes were composed: it will be the most reliable reference for the next time.
Reduce waste
Decide first whether you will serve a starter, first course or second course, then choose the format. Prepare the dressing separately and add only the necessary amount.
Store raw and cooked separately and do not leave perishable foods at room temperature. For specific quantities and conservation, always follow the instructions on the package.
